This traditional dish is enjoyed on Eid-Ul-Fitr in every Muslim household! Each household has their own different version of making Sheer Khurma. Some add more or less vermicelli, some are more thick, some are more liquidy and everyone adds different varieties of nuts.
When you go to different houses for Eid gatherings, you can taste their tradition and culture in their Sheer Khurma. This is what truly defines Eid, tasting a variety of recipes and traditions!
Sheer Khurma
Ingredients
- Milk: 2 Litre
- Kharek (Dried dates): ¼ cup
- Cardamom powder: ½ tsp
- Crushed almonds & pistachios: 1⁄3 cup
- Sliced pistachios: 1 tbsp
- Sliced almonds: 1 tbsp
- Evaporated milk: 1 tin
- condensed milk: ½ tin (395 ml)
For Tempering:
- Ghee (clarified butter): 2-3 tbsp
- Green cardamoms: 3
- Crushed vermicelli: 2 tbsp
- Crushed almonds & pistachios: 2tbsp
- Sliced pistachios: 2tbsp
- Charoli: 1 tbsp
- Sliced almonds: 2 tbsp
Method:
- In a pot, boil the milk till it starts bubbling up.
- Then add the kharek and let it cook on a low flame for 40 minutes.
- Stir occasionally. When the kharek softens, add cardamom powder, crushed almonds, crushed pistachios, sliced pistachios and sliced almonds.
- Simmer on low heat till the flavours of the nuts can be tasted in the milk.
- Now add the condensed milk. You can adjust the amount of condensed milk as per your taste.
- In a pan, heat up the ghee.
- Add green cardamoms and crushed vermicelli.
- Stir well and roast it till golden brown.
- Then add in all of the nuts and roast till it starts getting aromatic.
- Mix everything well together. Then carefully pour the tarka in the milk.
- Let it cook on low flame for another 15 minutes.
- Lastly, add evaporated milk, stir and let it simmer for 5 minutes.
- Give everything a final stir and voila!
- Serve and enjoy your Shahi Sheer Khurma hot or chilled!
